Easy Chicken Pot Pie Recipe

One of my favorite home-cooked meals, especially in the winter and spring, is chicken pot pie. Sadly, I don’t have the time or patience to make the crust myself, cut up 100 different kinds of vegetables and slave in the kitchen for hours. So when my Mom started making this simple recipe back when I still lived with my parents, I knew it was something I could replicate. In fact, I used to make a smaller serving for myself many times for dinner at college. It’s easy to make and only requires a few, inexpensive ingredients.

Ingredients

  • 1 2/3 cups frozen mixed vegetables
  • 1 cup cut-up cooked chicken SAVE $
  • 1 can condensed cream of chicken soup
  • 1 cup Original Bisquick™ mix
  • 1/2 cup milk
  • 1 egg

Directions

  1. Heat oven to 400°F. Mix vegetables, chicken and soup in ungreased 9-inch glass pie plate.
  2. Stir together remaining ingredients with fork until blended. Pour into pie plate.
  3. Bake 30 minutes or until golden brown.

I cheat even more though on the easy part… ready made crusts 😉 chicken pot pie soup 😉 a bag of veggies and a little bit of flour! Tastes really good, but clearly not as healthy or fresh as this recipe! I will have to try this next time!
