Rhubarb Recipes

The other day I saw a recipe on Pinterest that included rhubarb and it instantly brought back memories of summer.  When I used to spend days at my grandmother’s house, we would often play around in her backyard, which included a small garden (we mostly played basketball on the small court, but the garden was a close 2nd in terms of outdoor fun). One item she frequently grew when the weather was warm was rhubarb. I’m sure she made food from the rhubarb, but all I remember is picking it myself and biting on the sour-yet-delicious plants straight from the ground. I loved the tart taste for some reason and would look forward to enjoying rhubarb when I visited her.

Then as I got older, I experienced rhubarb once again. When I was a waitress at a local restaurant/ice cream shop/candy store, they often had strawberry rhubarb pie as a dessert. It was delicious. Sure, that job wasn’t the best and created a lot of embarrassing/hilarious teenage moments, but at least the food was good.

I’ll be the first to admit that I don’t think I’ve had anything with rhubarb in it since then, and I’m missing it. So I browsed the web for a few summer recipes that I could try to make on an upcoming weekend. I’m thinking a fun rhubarb drink or a fruity dessert- two of my favorite things to make. Do you enjoy rhubarb? What are some of your favorite recipes using this ingredient?
